nitika's soya kathi kebab

Serves 3
Soya chunks soaked for an hour drained and squeezed.    1cup
Paneer chunks 1cup
Onion cube 1cup
Capsicum cube 1cup
Tomato cubes 1 cup
Satey sticks 9-10
Line up all the above one by one in stick and repeat again to cover full stick.
Marinate sticks with salt ginger garlic paste
Mix coriander chutney with little curd and brush these sticks with it. Keep it for sometime.
Roast sticks in oven or grilled pan till it brown
In a mixer grind garlic ginger onion tomato.
Heat butter in pan cook this onion tomato purée
Add spices salt chilli powder turmeric. Cook
Add little cream. Now place roasted sticks in this gravy. Cook till these sticks sucks almost gravy.
On other side make a dough with plain flour and salt
Roll out thin small chapattis out of it.
Now place one stick in one chapatti.
Roll and again saute on griller with little oil.
Do the  same with all sticks.
Now serve with wrapped all with butter paper or foil paper.
U find these sticks very juicy and tasty.

Jaisalmeri channe


There s a intense heat in jaiselmer . So this Channe and curd combo is very good.
People there love this dish.

Serves 3

Kale Channe soaked and boiled 1 cup
Curd 1cup
Gram flour ( besan) 2tsp
Ginger garlic paste 1tsp
Dry red chilles 4
Oil
Mustard seeds(rye) 1 tsp
Cumin seeds 1tsp
Bay leaf 2
Salt red chilli turmeric powder

Mash half boiled Channe and keep aside
Heat oil add cumin and bay leaf
Put ginger garlic paste. Cook
In a bowl mix besan and curd
And add salt red chilli and turmeric in it
Put curd mix in cooked ginger garlic
Cook this while stirring continuously at least for 10 minutes
Add mashed Channe in it. Cook further.
Now add rest of Channe.
At the time of serving heat oil in a pan
Add rye and red chilli powder in it.
Put this tempering on cooked Channe.
Jaisalmeri channe are ready.

TYPICAL FRUIT DIET PLAN

BREAKFAST: hot water, bananas and apples.
LUNCH: green tea with fruits like peaches, mangoes, plums, grapes or melons.
DINNER : a filling fruit like an avocado or a banana with dried fruits like dates, raisins, figs and more green tea.

* do it only fortnightly. This can be healthy but only up to a point.

Spicy potato salad with Sesame Seeds ....indulge in Navratra

Serves 4

A salad which goes well....

1/2kg potatoes
2-3 tbsp chopped mint leaves
2-3 green chillies - deseeded & slit lengthways
1/2 cup pomegranate
4 tbsp tamarind pulp (imli chutney)
1tsp sesame seeds - roasted on tawa
Salt & pepper to taste

Boil potatoes but not overboil
Peel & slice as per choice
Place in serving bowl & sprinkle salt and pepper. Toss gently.
Add pomegranate , mint & green chillies.
Sprinkle tamarind. Add sesame seeds & toss lightly. Chill.
Transfer to a serving bowl.
