A delicate pasta soup...

CORN BASIL & FUSILI SOUP
Serves 4
Ingredients

½ cup onion, chopped
2 cloves garlic, chopped
¾ cup cream style corn (tin corn)
10 basil leaves chopped
1/3 fusili (pasta)
1 tsp olive oil
2 tbsp tomato puree
Salt &pepper to taste
For the garnish
2tbsp grated cheese
Basil leaves
Method
In a pan, heat oil add garlic, sauté for few seconds, add onion, and cook for 2 minutes
Add corn, basil, tomato puree, fusili and 3 cups of water and boil for 10 minutes until fusili is cooked
Add salt and pepper and mix well.
Serve hot, garnish with cheese and basil leaves.
